Easy Spring Minted Pea Soup
Ingredients
4 tbs. olive oil
2 shallots, thinly sliced
1 garlic clove, minced
1lb. fresh or frozen peas, blanched
2 cups vegetable stock (preferably home made)
20 mint leaves, plus mint for garnish
Kosher salt and freshly ground pepper, to taste
Creme fraiche for serving
How it's done
In a saute pan over medium heat, warm 2 Tbs. oil. Cook shallots, stirring, 3-5 minutes. Add garlic; cook, stirring, 1 minute. Transfer to Vitamix blender ( or use an immersion blender) add peas, stock and mint. Slowly bring up to full speed; bland until soup is pureed, season with salt and pepper. Garnish with Creme fraiche and a sprig of mint.
Pair with a nice white crisp white wine!
